Antic Ancho Chili Recipe

Ingredients:

3 dry ancho chili
1 Tbsp of olive oil
1 onion (large); chopped
1 Tbsp of tomato paste
1 tsp of cumin
1/4 tsp of blackpepper
1/2 c of dry wine (white)
4 ounces of crumbled goat cheese
1 Tbsp of butter (unsalted)
2 1/2 pound stew meat
2 Tbsps of garlic; minced
1/4 tsp of oregano
1/2 tsp of salt
1 1/4 c of beef broth
1 1/2 tsp of cilantro; chopped

Instructions:

Remove chili stems and cut lengthwise; remove seeds. Put in large saucepan then add in water. Boil reduce the heat at once. Let it simmer ’til tender for 15 mins.

Heat the oil w/ butter in large thick pot placed over mid-heat. Saute meat ’til browned then set it aside. You add chopped onions into the pot cook it for a minute.

You add in garlic, let it cook for 2 mins on high-heat then you reduce the heat let it cook for four more minutes.

You drain your chilies, setting aside 1/2 c of liquid. Combine peppers w/ reserved fluid. Pour into onions.

Put meat back into pot add in rest of the ingredients. Boil then you reduce the heat, cover cook under low-heat for 1-2 hrs. Cover w/ cheese.

Chili (Bar-On) Recipe

Ingredients:

2 pcs of garlic cloves (large); chopped finely or crushed
1 pc of onion (large); chopped roughly
1 pc of bell pepper (green); chopped
1 pc of pepper (green, hot); chopped
1 pc of zucchini; cut to dices
3/4 c of tomato paste
1 can of peeled whole tomatoes (large)
3 Tbsps of chili powder
1/2 tsp of cloves (ground)
1 tsp of vinegar (white)
1/4 c of uncooked rice (brown)
4 c of beans (kidney, canned or cooked)

Instructions:

Saute garlic, onion, bell pepper, and hot pepper in half cup of water till onions become translucent and tender. Add zucchini, tomato paste, tomatoes, chili powder, cloves, vinegar, and brown rice; let it boil.

Once boiling, lower the heat. Add beans and let it simmer more than one hour.

Mayan Chili Recipe

Ingredients:

1.5 lbs of ground beef
1 pc of diced green pepper (medium)
4 ozs of diced green chilies; drained
1.5 Tbsps of chili powder
1/4 c of tequila (if desired)
15 ozs of tomato sauce
1 c of water
6 ozs of tomato paste
16 ozs of undrained can of kidney beans
8 ozs of undrained sweet corn
1 tsp of salt (garlic)

Instructions:

Cook meat ’til brown in a large-sized saucepan. Drain the drippings off from pan. Add in water, tequila, paste, tomato sauce, salt, chili. green chilies and green bell pepper.

Let it cook on low-heat for half an hour. Stir chili frequently. Add in corn and beans.

Let it cook for another five minutes ’til corn and beans are completely heated. Good for six persons.
