Chili Con Carne (P/C) Recipe


1 small pc of garlic; minced
2 tsps of chili (powder)
1 tsp of sugar
1/2 tsp of pepper
2 tsps of salt
2 1/2 cans of tomatoes
1 c of celery; minced
2 c of beans (kidney, in can)
1/4 c of bacon fat OR drippings
1/2 c of pepper (green); minced
1 c of onion; minced
1 1/2 lb of grounded beef


Saute beef in fat. Drain off excess fat. Add the pepper then onions cook until onions are clear.

Mush up a cup of the beans then mix in the beef mixture together with another cup of beans, the tomatoes, sugar, celery, chili powder and salt. Transfer mixture to a pressure cooker and cook on fifteen pounds of pressure fifteen minutes.

Lower down heat and pressure at once. Allow the mixture to simmer (do not pressure cook) ’till meat and beans are tender and flavor has been absorbed. Good for six persons.
