Chilis In Oil (Nam Prik Pow) Recipe

Ingredients:

4 Tbsps of oil
2 Tbsps of sugar
3 Tbsps of garlic; chopped finely
3 Tbsps of shallots; chopped finely
1 tsp of salt
3 pcs of chilis (red, dry); deseeded coarsely chopped

Instructions:

Heat oil and saute garlic ’til it turns gold-brown in color, then remove garlic then set it aside. Saute shallots to the used oil ’til it becomes crispy, take it off from oil and leave it aside. Now, saute chilis ’til its color darken, take it off from oil and lay it on mortar along with garlic and shallot.

Pound it all together. Afterward, reheat oil, then add paste. Sprinkle salt as well as sugar, mixing well ’til its sauce turns thick red/black in color.
