Chili Paste – Sambal Recipe

Ingredients:

1/2 c of whole hot chiles (red, dried); stemmed then seeded
2 pcs of garlic cloves; halved
1 pc of onion (small); chopped coarsely
1/4 c of sugar (refined)
1/4 c of juice (lemon)
1/2 tsp of salt
1/4 c of water

Instructions:

Combine hot chilies, onion, garlic, sugar, water, salt, and juice inside a processor; process till smooth. Pour onto a saucepan; cook above moderate heat, while stirring frequently, for 10 mins or till reduced to half cup. Let it cool before serving.
