Ingredients:

1 tsp of oil (safflower)
1/3 c wine (red)
3 onions (large); cubed
2 c plum tomatoes (Italian); coarsely chopped
4 cloves of garlic; minced
1/4 c green chili (canned); chopped
5 c vegetable stock
1 c celery; sliced
1 c carrots; diced
2 Tbsps powdered chili
1 c beans (garbanzos); soaked drained
3 c mushrooms (white); sliced
1 c kidney beans; soaked drained
3 Tbsps tomato paste (unsalted)
1 c beans (pinto); soaked drained
1 tsp cumin (ground)
1 tsp basil (dried)

Instructions:

Using a stockpot, mix oil with red wine. Simmer on medium heat. Saute onions for eight to ten minutes until translucent, then add the mushrooms, then cook for another five minutes.

Gradually add the carrots, tomatoes, celery, garlic and the cumin, cook til carrots are fork-tender. Pour in the vegetable stock with the rest of the ingredients.

Increase heat til it boils, lower temperature, then simmer (with lid on) for about three hours til beans are tender. Season to taste.

Ingredients:

3 lbs of sirloin; cubed
Broil
Tri-tip
6 ozs of sausage
4 Tbsps of Wesson oil
1 can of beef broth (14.5 ozs)
1 can of tomato sauce (Hunts, 8 ozs)
1 can of Snap-e-tom (6 ozs)
1 can of Budweiser (12 ozs)
11 Tbsps of chili (powder) (Gebhardt)
1 tsp of garlic (powder)
1 Tbsp of onion (powder)
2 tsps of hot sauce (Tabasco)
1 Tbsp of cumin
Salt

Instructions:

Fry beef with the oil. Saute the sausage ’til done. Drain sausage well. Transfer beef and sausage in a pot.

Add in half of broth and allow to simmer. Mix in tomato sauce, Budweiser, Snap-e-Tom, chili, onion, garlic, and a teaspoon of hot sauce.

Allow to simmer for an hour ’til meat becomes tender. Mix in the remainder of the chili, cumin and hot sauce.

Allow to simmer for half an hour. Season with salt. Makes 1 helping.

Ingredients:

2 c of diced zucchini
1 c of lean beef (ground)
1/2 c of peppers (green); chopped
1/2 c of onions; chopped
8 oz of tomato salsa (mild)
1/4 c of wine (red)
1/4 c of raisins
1/2 tsp of salt
1 Tbsp of tomato paste
1/4 tsp of cinnamon (ground)
1/4 tsp of allspice (ground)
15 oz of beans (kidney, red, canned); drained
Sour cream
Scallions; sliced
Cheese (Cheddar); grated

Instructions:

Place beef, zucchini, onions, and pepper inside a saucepan above moderate heat. Saute for 7-10 mins, stirring frequently till vegetables become tender-crisp. Add salsa, raisins, wine, paste, cinnamon, allspice, and salt then cover; simmer for 10 mins, stirring frequently.

Add the beans and continue to cook for 5 more mins or till heated thoroughly. Serve on bowls with cheese, scallions, and sour cream on top.

Ingredients:

3 cloves garlic; minced
4 pounds of lean beef (ground)
4 green bellpeppers; chopped
1/4 c of chili seasoning
4 cans of red kidney-beans (1 pound); drained
3 dashes of redpepper
Bay leaf
Rice (optional)
2 Tbsps of oil
6 chopped onions
6 cans of tomatoes (whole, 1 pound)
2 cans of tomato-paste (6 ounces)
1 tsp of vinegar (white)
Pepper
Salt

Instructions:

Heat oil saute the garlic inside a thick large kettle ’til golden. Add beef, stir well to crumble and let it cook for 10 mins or ’til browned evenly.

Pour a portion of the oil drippings onto skillet. Add and saute greenpeppers and onions, cooking ’til tender. Blend in to browned meat w/ beans, tomatoes, tomato-paste, vinegar, redpepper, bayleaf and chili seasoning.

Season w/ pepper and salt. Let it cook w/ cover over low-heat for 60 mins. Add more tomatoes once mixture becomes very dry. If it is too watery, remove cover then simmer for longer.

Ingredients:

1 large can of beans (kidney)
1 pint of olives (black)
1 1/2 Tbsps of sugar (brown)
1 Tbsp of vinegar (red wine)
1 Tbsp of oregano
3 pcs of Laurel leaves
1 large can of tomatoes
1 Tbsp of flour
1 Tbsp of cumin
4 Tbsps of chili (powder form)
4 cloves of garlic; minced
3 pcs of small onions; minced
3 Tbsps of fat (from bacon) OR oil
3 lbs of grounded beef

Instructions:

Saute garlic and onions until onions are clear but garlic is not fully browned. Remove from heat but leave the oil in the pan. Transfer chili to heated oil.

Add a teaspoon of flour. Mix thoroughly.

You can add more oil or fat as needed. Next add the beef then cook until nicely dark in color. Add the tomatoes then simmer for twenty minutes.

Season with the Laurel leaves, vinegar, sugar and oregano. Continue cooking for twenty minutes more. Stir the beans in then cook for two more hours.

Add the olives and season with pepper and salt as needed. Good for three persons.

Ingredients:

3 lbs of chicken; sliced into small pieces
4 cloves of garlic; peeled and sliced finely
1 pc of onion (large); Sliced into 1/2″ strips
3 Tbsps of oil (vegetable)
2 Tbsps of lemon grass; minced
1 Tbsp of caramel sauce
Salt
1 tsp of chilies (ground)
1 Tbsp of sugar (granulated)
1 c of water
4 Tbsp of sauce (Nuoc Mam)

For the Caramel Sauce:
1/2 c sugar
4 Tbsps of water
1/2 c of water

Instructions:

Fry onion and garlic on moderate flame with oil and salt ’til onion is translucent. Drop chili and lemon grass then fry 1-2 more minutes ’til fragrant. Put chicken then further cook ’til browned lightly.

Pour into mixture Nuoc Mam, caramel and sugar, mixing well. Pour 1 c water then continue cooking 45 more minutes ’til chicken becomes tender while stirring from time to time. Add water when needed.

To create the caramel, combine half-cup of sugar together with four Tbsps water using saucepan and boil on moderate heat ’til it changes color. Lower heat then simmer ’til brown before adding 1/2 c water. Stir ’til sugar has dissolved. Lift off from flame then store into sealed jar into refrigerator.

2 lbs meat (lean beef or pork)
2 Tbsps oil
1/2 c of sliced onion
3 potatoes (medium); diced

6 pcs of chili (green)
2 tsps of salt

Instructions:

Cut meat in cubes and add a dash of salt. Fry til brown. Add in water of just the right amount, covering the meat along with the rest of the ingredients.

Bring to a boil, simmer, adding in water as needed until your preferred soup texture is achieved.

4 pcs of onions (medium); chopped finely
10 lbs of beef brisket (lean); finely chopped
1/4 c of oil
1-1/2 pcs of garlic cloves; chopped finely
2 lbs of pork (ground)
7 oz of whole chiles (green); chopped finely
15 oz of tomato sauce
2 c of tomatoes (whole); finely chopped
1 Tbsp of cumin (ground)
1 tsp of salt
1 tsp of oregano (dried)
1 Tbsp of mustard (dry)
2 Tbsps of tequila
6 Tbsps of chili powder
1 can of beer
2 pcs of bouillon cubes (beef)

Instructions:

Heat the oil; brown the beef and pork. Add garlic, onion, chiles, oregano, cumin, salt, mustard, tomatoes, (tomato sauce), beer, tequila, beef cubes, and powdered chili. Let it boil; reduce the heat.

Let it simmer for 2 to 3 hours, while stirring frequently. Don’t stir on its last half hour of cooking.
