500-Mile Chili Recipe

Ingredients:

6 c of stewing beef; cut to cubes
2 c of chorizo (Spanish sausage)
5 pcs of garlic cloves; chopped finely
2 pcs of onions (large); diced
3 pcs of peppers (jalapeno); peeled and diced
3 Tbsps of olive oil
3 Tbsps of chili powder
1/2 tsp of cayenne pepper
3 cans of tomato sauce (15 oz each)
1-1/2 c of water
1 tsp of salt
1 can of beer (Mexican)

Instructions:

Brown the meat with the oil then add garlic, onions, and (jalapeno) peppers. Add (chili) powder and cayenne halfway through cooking, stir occasionally. Add salt, tomato sauce, beer, and water.

Cook above gentle heat, covered, for half an hour while stirring frequently. Uncover then let it simmer, at about two hours.
